Smoked Halibut Cheeks poached in Huckleberry-Shallot Butter

A friend shares his halibut, a GOOD friend shares their halibut cheeks. And we have huckleberries this year, so let’s create another kind of surf and turf – smoked halibut cheeks poached in a huckleberry and shallot butter. Sounds pretty decadent, huh?

Smoked Halibut Cheeks poached in Huckleberry-Shallot Butter

Ingredients

  • 1 lbs. fresh halibut cheeks
  • 1 cup fresh picked huckleberries
  • 1 shallot, minced
  • 1 handful of sage, ripped
  • 1 cup butter
  • 1 TBSP kosher salt
  • 1 TBSP Creole seasoning
  • 1 cup lager

Instructions

  1. Dust the halibut cheeks with Creole seasoning
  2. Melt butter in beer inside a dutch oven in the Big Green Egg
  3. Add shallots to the butter and soften
  4. Add ripped sage leaves to the butter
  5. Add huckleberries and simmer for 10 minutes
  6. Remove the Dutch oven
  7. Set the temperature of the Big Green Egg to 225
  8. Added soaked alder chips
  9. Once the smoke is rolling, place the halibut cheeks over a water bath and smoke 10 minutes a side
  10. Remove the cheeks from the smoke and increase the temperature to 350
  11. Create a pouch from heavy duty aluminum foil and add the butter mixture to the pouch
  12. Place the smoked halibut cheeks into the huckleberry mixture and it goes onto the grill for 10 minutes
  13. Plate the halibut cheeks with spoonfuls of the huckleberry-shallow butter on top
