Smoked Brisket Sandwich with Sriracha Coleslaw

With the pounds of smoked brisket from the past weekend’s smoking session, it was time for some smoked sandwiches with a kicked up Sriracha coleslaw. It is so easy to whip up a coleslaw, I am amazed that anyone would purchase a package of limp, soggy cabbage from the supermarket. A key to a great smoked brisket sandwich is to grill some butter brioche buns.

Smoked Brisket Sandwich with Sriracha Coleslaw

Ingredients

  • Several pieces of smoked brisket (see previous recipe)
  • Brioche buns
  • 1 tsp butter
  • Pickled red onions
  • Muenster cheese
  • Fire Season Chili Ale BBQ sauce (see previous recipe)
    For the Sriracha Coleslaw
  • 1 head green cabbage, finely shredded
  • 2 large carrots, grated
  • 1 yellow onion, grated
  • 3/4 cup mayonnaise
  • 2 TBSP Sriracha
  • 2 TBSP sugar
  • 2 TBSP rice wine vinegar
  • 1 TBSP stone ground mustard
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

    For the Sriracha Coleslaw
  1. Combine the shredded cabbage, onion and carrots in a large bowl
  2. Whisk together the mayonnaise, Sriracha, sugar, rice wine vinegar, mustard, salt, and pepper in a medium bowl
  3. Add to the cabbage mixture
  4. Mix well to combine and taste for seasoning
    For the Smoked Brisket Sandwich
  1. Butter halved brioche buns and grill on a flat top until golden
  2. Slice the brisket across the grain and warm
  3. Assemble your sandwich with the smoked brisket, BBQ sauce, muenster cheese, Sriracha coleslaw, and pickled red onions
  4. Enjoy
