Pumpkin Porter and Bacon Roasted Potatoes with Mushrooms

Just in time for #InternationalBaconDay comes this recipe that features Out of Your Gourd pumpkin Porter from Red Hook Ale Brewery. Everything is better with bacon, especially a great porter and mushrooms.

Pumpkin Porter and Bacon Roasted Potatoes with Mushrooms

Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour, 20 minutes

Ingredients

  • 1 lbs red potatoes
  • 4 oz. Out of Your Gourd Pumpkin Porter
  • 1 lbs brown mushrooms, sliced
  • 2 garlic cloves, minced
  • 3 strips bacon, chopped
  • 2 tsp dill weed
  • 1 TBSP dried tarragon
  • 2 dashes hot sauce
  • extra virgin olive oil
  • salt and black pepper to taste

Instructions

  1. Preheat oven to 350F
  2. Chop potatoes into 1 inch cube (or at cubish pieces).
  3. Place into an oven safe dish
  4. Drizzle potatoes with olive oil, and dust salt and black pepper
  5. Bake for 30 minutes
  6. Cook down bacon pieces
  7. Add mushrooms, pumpkin porter, hot sauce and a small pinch of salt
  8. Sauté together until the mushrooms start to get the nice brown color
  9. Add garlic cloves, sauté for 3 minutes
  10. Combined roasted potatoes and mushroom mixture
  11. Increase oven heat to 400F
  12. Roast for another 20 minutes, or until the potatoes are soft
  13. Garnish dill and tarragon
