Pale Ale Savory Sausage Pancakes

It’s the morning after, and you had a great time, but now there’s a grumble in your stomach. The cure is breakfast, but let’s do a breakfast that a little different. Pale Ale Savory Sausage Pancakes made with andouille and the Shane McConkey IPA from Crazy Mountain Brewing will cure the ills of last night. Add in a Spicy Porter Maple syrup using great Canadian amber maple syrup and the Blackhook Porter from Redhook Brewing, you have a complete breakfast for the beer and food lover.

Pale Ale Savory Sausage Pancakes

Ingredients

    For the pancakes
  • ½ cup Shane McConkey IPA
  • 2 links andouille sausage
  • 1 medium yellow onion, diced
  • 1 TBSP butter
  • ¾ cup sour cream
  • 1 egg
  • 1 TBSP melted butter
  • 1½ cups Gluten Free Pancake Mix
    For the Spicy Porter Maple Syrup
  • ¼ cup pure amber maple syrup
  • ¼ cup porter
  • 1 tsp chili powder
  • 1 tsp smoked paprika

Instructions

    For the pancakes
  1. Remove andouille sausage from casings
  2. Melt butter over medium heat and add onion. Cook until slightly golden
  3. Add andouille sausage and cook until brown
  4. Allow to cool
  5. Preheat griddle to medium-high heat.
  6. In a bowl, whisk together Shane McConkey IPA, sour cream, egg, and melted butter
  7. Add pancake mix and whisk until smooth
  8. Add andouille and onion mixture, and mix
  9. For each pancake, pour ¼ cup batter onto hot griddle
  10. Cook until the top is bubbly, about 3 minutes
  11. Flip and cook 2 minutes more
    For the Spicy Porter Maple Syrup
  1. Combine all ingredients in a sauce pan over low heat
  2. Heat until the syrup is reduce by 25%
