Golden Grizzly Pork Verde

Filling the belly with warmth, the Golden Grizzly Pork Verde is hearty and spicy with tender bits of slow-cooked pork. The Golden Grizzly Ale from Glacier Brewing Company of Polson, Montana is the featured beer in this recipe, but any decent golden or blonde ale will do the trick.

Ingredients

  • 12 oz. Golden Grizzly Ale
  • 3 lbs. pork country-style ribs
  • 1½ quarts chicken stock
  • 2 lbs. tomatillos, husks removed
  • 1 cup cilantro leaf
  • 1 yellow onion
  • 3 cloves garlic, minced
  • 1 TBSP chili powder
  • 1 TBSP ground cumin
  • 4 poblano chiles, seeded and chopped
  • 1 jalapeno peppers, seeded and chopped
  • 2 Anaheim chiles, seeded and chopped
  • 1 TBSP kosher salt
  • fresh ground pepper, to taste

Instructions

  1. Heat grill to 350°F
  2. Season pork with chili powder and salt
  3. Sear the seasoned pork until browned
  4. In a large cast iron dutch oven, add butter, onions, and garlic
  5. Saute the chopped onion and garlic seasoned with salt and pepper until tender
  6. Remove the pork from the grill, and place in the dutch oven
  7. Add the cumin, then stir in beer and chicken stock
  8. Simmer for ½ hour
  9. Add in poblanos, jalapenos and bell peppers
  10. Puree the tomatillos and cilantro in a blender, and add them to the dutch oven
  11. Cook for an additional hour
