Class V Smoked Albacore Loin

Fresh caught albacore tuna from the Pacific Ocean that is marinated and smoked. Smoking tuna was a new one for me, and I found it delicious and quite easy. The key was the amber ale marinade featuring the Class V Amber Ale for Lone Peak Brewing and using apple for the smoke.

Smoked Albacore Tuna Loin

Prep Time: 1 hour

Cook Time: 1 hour

Total Time: 2 hours

Ingredients

  • 1 whole albacore tuna loin
  • 2 cups Class V Amber Ale
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 1 TBSP sesame seeds
  • ½ TBSP poppy seeds
  • 2 TBSP ground black pepper
  • ½ tsp crushed red pepper
  • ½ tsp hot sauce
  • 2 TBSP lime juice
  • 1 TBSP olive oil

Instructions

  1. Combine amber ale, soy sauce, olive oil, lime juice, and hot sauce
  2. Add albacore loin and allow to marinate for 2 hours
  3. Start the smoker and set the temperature to 200° F
  4. Set the albacore in the smoker and smoke for 1 hour
  5. Heat grill to medium-high
  6. Remove albacore from the smoker
  7. Coat with mixture of brown sugar, sesame seeds, poppy seeds, black pepper, and crushed red pepper
  8. Sear the outside of the albacore on the grill, about 2-3 minutes per side
  9. Remove, slice, and serve
