Brown Shugga Bolognese Sauce with pasta

The challenge is to create an awesome bolognese sauce that uses the Brown Shugga Ale from Lagunitas Brewing Company instead of the often used wine in the recipe. The result is a sweet and rich meat sauce that plays with your pasta without overwhelming the entire plate. You need a healthy amount of patience to make a bolognese right. This particular cook took 3 and half hours, and we could have even gone longer, if it were not for the grumbling stomachs in the house.

Brown Shugga Bolognese Sauce with pasta

Ingredients

  • 1 cup Brown Shugga Ale
  • 1 lbs. hot Italian sausage
  • 1 TBSP olive oil
  • 3 TBSP butter
  • 1 cup onion, chopped
  • 2 stalks celery, chopped
  • 2 carrots, sliced
  • 2 tsp kosker salt
  • 1 tsp black pepper
  • 1 TBSP Creole seasoning
  • 1 tsp smoked paprika
  • 1 cup whole milk
  • 1 large can imported Italian plum tomatoes, cut up, with their juice
  • 1 lbs. pasta
  • Parmesan-reggiano cheese at the table

Instructions

  1. Put the olive oil, butter and chopped onion in the medium hot pan
  2. Cook and stir the onion until it has become translucent
  3. Add the chopped celery and carrot
  4. Cook for about 2 minutes, stirring vegetables to coat them well
  5. Add Italian sausage, a large pinch of salt, Creole seasoning, and a few grindings of pepper
  6. Cook until the sausage has lost its raw color
  7. Add milk and let it simmer gently, stirring frequently,
  8. Add smoked paprika and stir
  9. Add the Brown Shugga ale, let it simmer until it has half evaporated
  10. Add the tomatoes and stir thoroughly to coat all ingredients well
  11. When the tomatoes begin to bubble, turn the heat down so that the sauce cooks at the laziest of simmers
  12. Cook, uncovered, for 3 hours or more, stirring from time to time
  13. Taste and correct for salt
  14. Toss with cooked drained pasta, adding the tablespoon of butter, and serve with freshly grated Parmesan on top
